It was what a guy named Cesar used to make fir his lunch at a swank joint where he worked. The are is the process of making in front of you (not like that happens anymore) and it caught on with his co workers and eventually to the menu on the swank joint where he worked.

Yes, I have used it to fry steak in a pan as it has higher smoke rate than say an olive oil. I do not like to cover a steak with sauces but I do like to vary it a bit via oil and spices when pan frying in the colder months.
