It was what a guy named Cesar used to make fir his lunch at a swank joint where he worked. The are is the process of making in front of you (not like that happens anymore) and it caught on with his co workers and eventually to the menu on the swank joint where he worked.

Caesar was the dressing. Next time I'll make that correction. Preeeesh Mr. Cheddar Man

pan seared scallops and crab, lobster, and crawfish stuffed shrooms with melted jack cheese on top for dinner
