Safety's and RB's from high school up to NFL are that weight and height. Are they overweight? What am I missing here? How is 152 healthy for a man that's 5'10"?

lol if you're a SEC safety maybe with 8% body fat and run a 4.4
average is probably 165/170

those guys carry mostly muscle around and are built out of stone

Ray Rice is over 200. Warrick Dunn was around 200. Both are under 6'0". Are they fat?

Yeah, that's true, but it's still their body weight

No. But you think the average male trains like a football player?
5'10" 152 is skinny but not THAT skinny.
5'10" 190-200 is either a dedicated weight lifter with low body fat or very chunky. In most cases, it would be very chunky.
It's just sad to see the fat acceptance movement gaining ground.

What about people with larger frames? I know people who wear a size 36 waist at 185 and some wear a 32 waist at 205. Not everyone is built the same.

Again. The average guy does not even lift weights, much less train like an NFL player.
To the average male, 5'10" 190-200 is at least very chunky, bordering on outright fat, depending on body type.

Yea I know. I'm accounting for that. For the most part, that height and weight is borderline FAT. Most guys have very little muscle.
That's because they're fat

Welp. I'm stating facts, but OK.
You are part of the fat acceptance movement. Just understand that.

185 on a 5'10" frame is fat?
How can you be serious?

If they have a 36 inch waist, yes, they most likely have way too much fat way too little muscle.
It's insane how out of touch Americans are with this type of thing.
I'd say "ideal" weight range for an adult male, who is reasonably fit but is neither a dedicated runner or a dedicated weight lifter, but does a little bit of both, is between 155-175.

OP, you need to have some rest days in there ... injuries will creep up. Do you cross train at all??

This.
I'll be kind here. If you run every day of the week (a mistake btw) for 40 miles a week, then you're averaging just under 6 miles every day. You can gut out an additional 7.1, just eat properly and slow down a bit and you'll be fine.

Just to put that in perspective for you, LSUs Golden Girls have a weight requirement. Their rule of thumb is 100 lbs at 5' and then 5 lbs for every inch over that. That means at 5'10" they want the girl to be at 150 lbs or below. Typically for men that don't want to look like Golden Girls, it's about 7-8 lbs for every inch over 5 foot.
