Top of the capitol building is definitely the thing to do. I’ve taken people there are they like it.
A drive to St Francisville to check out the myrtles or other plantation homes is a must as well. Not very far away either.

-Port Hudson National Cemetery and Battlefield Park
-Old State Capitol Tour.
-USS Kidd Tour
-Magnolia Mound Plantation.
-Tour the LSU campus and take in some real history of the university. LSU as a top tier officer producing university during WW2 goes VERY under-appreciated by younger generations.
Exercise:
-The Beast Trail in St Francisville.
-Levee between downtown and LSU(The Mississippi River is very impressive to visitors. We take for granted how big the MFer is).
-LSU Lakes
Dining:
-Tsunami and 18 Steak for atmosphere/view
-Louisiana Lagniappe for great local food
-Chimes/Roux 61/Willies for casual local Food.
-Walk-Ons Campus if he's a college sports fan.

Kayak bayou fountain from highland road park
Do a boat tour of swamp/fish or go frogging
Visit a river bar like Prop Stop
Walk or bike the riverwalk

I used to do this route below before the got damn boat launch was put down there. Was a bitch to get out the bayou back then.
I used to live on Fox Run and had a gate behind my house to walk down and put in our pirogue. We would paddle from there to Highland and get out and get a ride back in a friend's truck.
That's a great little slice of nature right in the city.

impress? maybe alleviate the ennui of the town (and i grew up there and loved it as a kid/college student)
i'd take them by the campus and lakes
lunch at Tony's or some authentic equivalent
Rural Life Museum
dinner at Chimes, Parrains, Digulios, etc. Anywhere with semblance of personality and atmosphere
a show at Teddy's (a little bit out of town)
that really only covers 1 day ... not sure what the hell you do after that other than shopping, golfing, fishing, eating more and sightseeing as it were.
