I grow a lot of thai chili, tobasco, habanero, and ghost peppers to make sauces with. The ghost peppers have a really awesome taste. You can take a very tiny bite at the tip to get the flavor without the heat. I made some jelly with my latest pickings. Took some super ripe apricots and cooked it down with the pureed ghost peppers and then back sweetened with a lot of sugar. The sweetness level mitigates some of the heat. It's still potent stuff, but it's not too bad.
I made a dipping sauce with ghost peppers and mangos earlier in the summer, and it is almost too hot. Tastes great at first, but the heat hits right after that and doesn't stop building for a good while.
