then I would view this as your only shot of getting a pup from your dog. Again, I wouldn't pay the difference - pick is the pick, but that's for you to decide...

My suggestion to the OP is to tell the bitch owner you will take the $700 stud fee and perhaps steer a prospective puppy buyer or two to his litter. If he balks in anyway, just walk.
It's been my experience that lots of field dog owners tend to want to "preserve" their present dog's genes because they think their dog is more awesome than he/she really is....
In reality, most field dog owners would be better served NOT trying to recapture their present dog for their next dog by looking around and finding a good health certified / titled litter. Pony up the coin and let someone else screw with all the breeding and whelping hassle.
JMO....YMMV

This is true but you know you have a jam up dog when you mention breeding your dog and everyone of your friends wants a puppy just because they have seen your dog work.
I am going through the same thing OP related except with my 3 yo female YL. She has her health clearances and is running Finished in HRC. She would have her HRC title but I train her myself and can only make a limited number of hunt tests a year. She is good and my buddy wants to breed his male to her and while he is an awesome dog, he has no titles and I will be pulling my buddies teeth to get health certs on him. However, what he does bring to the table is a bunch of guys lined up to buy one of this male's puppies to the extent this liter would be sold before it hits the ground minus his pick of the liter.

Sounds like the typical tire kicking, wife talking, excuse making, money haggling, idiot. Tell him to kick rocks or give the puppy up.....unless of course the bitch is of the quality that you just have to have a puppy from. In that case, he's got you by the nuts.

Didnt read through the comments but youre literally handing this guy thousands of dollars based off the litter size and he wants to bitch over $300?? ... Walk away.
