I’ve had pretty good luck sharpening almost any blade. I just try a different method or bevel which usually works. If it sharpened the first time, it can be sharpened again.

Not always - I have a cheap-o Ganzo G720 and although edge retention is only so-so, I can get it razor sharp quickly and easily. It's my favorite knife for cleaning deer.
