Tonights was store bought, Boar's Head Horseradish.

I make a homemade version with horseradish, Dukes mayo, Texas Pete, some worcestershire and a dash of lime juice but I just add the ingredients to taste.

Thanks, I am going to give it a try on some Canada goose breast.

ETA: Do you cook the meat in the sauce or just dip after its cooked?

Dip afterwards.

I let the duck soak in water for a day to pull out blood.

Cooked the duck as follows:

Cubed breast meat on skewers
Brushed on Melted butter w/ maple syrup
Added some cracked black pepper on all sides
Grilled until rare
Salt to taste

The Boars Head Pub Style horseradish is really good for store bought IMO.
