Agreed. I eat a ton of venison, but bear is a little better. I think the extra fat helps. And it’s a different type of fat than on a deer. Deer fat is waxy, bear fat is closer to pork or beef fat.

I rendered the fat off a bear from Western NC a few years ago. You can render it in a crock pot (on low) easily. After rendering, you can eat the cracklins too.

It’s a light yellow color, mild flavor, and great to cook with, whether baking, sautéing or deep frying. I’ve deep fried fish in it, I’ve cooked eggs in it, I’ve used it as the binder for tamales, I’ve used it in cornbread. It’s fantastic. Don’t waste it!
