I actually really like the outdoor edge knives with the replaceable blades.

I find that the sharper the blade, the less issues I have

+1. Dull knives cause more accidental cuts than do sharp knives.

A gut hook is also a non-negotiable for me. Makes the process so much easier

Glad to see you're introducing your son to hunting and cleaning his kill. My son has grown up and moved away so we don't get to hunt together anymore. I miss it. He went on a short deer hunt last fall. He hadn't shot a gun in a long time so he sat in the stand w/ me. Killed a nice doe a short time later. It was a nice hunt.

The first choice for you is "keepsake" or "beater" knife. Either way, I'd suggest a fixed blade, 3-4.5" long. A fixed blade is easier to clean and, I think, more difficult to lose. I like orange handles as I can see a misplaced/forgotten knife easier w/ the orange handle. The aforementioned Morakniv is a fine choice for a beater. I keep on in my truck all the time. The linked Buck would be a great "keepsake." I gifted that exact knife to my cousin >20 years ago and he still uses it. I don't tike the blade shape or name, but the "Roach Belly" by Cold Steel is very useful. I spray painted the handle on mine orange.

For a "beater" folding blade, I'd look at the Outdoor Edge displosable blade knives. Mine is the model w/ disposable main blade and non-disposable gutting blade. Don't let him change the blades. Cold Steel makes a number of folding knives that would be good for skinning and aren't expensive. The Outdoor Edge will clean easier though because the back of the knife is open. For a "keepsake" folding knife, there's no better choice than the Buck Hunter.

Once he finishes high school if he still hunts get a nicer knife. Custom or maybe a bench made.

I really like the Outdoor Edge Duck Duo Knives. The hook on the handle fits in my hand well.
