I cook my steaks like you, but do two things different. First, I preheat to 550, and throw the skillet in the oven, while its preheating. No need to use more energy on the burner. Make damn sure you grab that skillet handle with an oven mitt when you pull it out, though.

I also like to use duck fat or highly refined beef fat (store bought).
