I would simply describe String Theory is an elegant model that conforms to observation with the problem being that simply conforming to observation doesn't make it right.
Until String theorists can say, "when we look, we should see XYZ" and then say, "here's the test and what one would look for" and then, other scientists can duplicate the work independently, it's just a work in progress.

Did not watch the video. The "universe as a type of hologram" is related to string theory. Assumed you'd know that, or that at least the vid would address it. My bad.

Right, and unless you're arguing what a scientific theory is, you just summed up what a hypothesis is. Can't predict anything with it. Can't even test it. Those are two big pieces of the scientific method puzzle missing. It essentially uses established scientific theories to try and bridge the gap and unify everything. It's not counter-productive though, because somewhere someone is working diligently to either prove or disprove some aspect associated with this idea. But that's all it is right now, an idea.
