Did a 10-day jaunt through London - Paris - Rome 2 years ago. I did fine with my old clodgy suitcases. I noticed our Pro tourguide - who is gone most of the year travelling - used the bag linked below. He says he had never had a moment's trouble with it, and used it instead of a suitcase - personals and all. LINK

I have a Wandrd backpack. Has roll top so can add more stuff if needed. I use it for my photography gear but you can use as just a backpack too. Great material and well made.

I’ve got an Osprey (I believe Talon 22) that’s a great size for a daypack. I can also fit a couple of changes of clothes and toiletries in and still fit it under an airline seat. It’s better as a daypack that doubles as a personal item than a personal item that doubles as a daypack. I use it hiking 14ers, carry it all day skiing, stuff snorkel and other beach gear in it for hike-to beaches, and use it as my personal item. The shoulder straps are very comfortable.

ETA: I see many Osprey packs have been suggested. They have a Sale going on through January 26 on their last year’s packs.

Will it stuff down into a bigger bag without any trouble? I'm looking for a comfortable daypack more than anything else (just needs to be big enough to handle our kids stuff (coloring book, snacks, drinks, etc.)

We have a good backpack thats a good personal item, but it's uncomfortable after an hour or two.

It has a semi-ridgid internal plastic frame and foam cushioning along the back. That’s part of what makes it so comfortable and why I consider it more of a daypack than just a personal item. You could lay it flat in a suitcase and pack on top of it, but I wouldn’t consider it “stuffable” into a larger bag. I’ve carried it for 10+ hours at a time on hikes and it’s plenty comfortable.

I use my osprey talon 22 as a personal item all the time. It is super comfortable and pretty spacious. I’ve used it on super long backpacking trips with no problem, also at all day theme parks. It has side pockets for water bottles and the chest and waist straps. Osprey also has the lifetime warrenty which I’ve had to use with no problems.
