Right now we arrive in Athens at like 2 AM on Saturday and were planning on going to Santorini that Monday-Thursday. I was thinking of changing our flight and maybe getting in Friday night in Athens, flying to Mykonos on Sunday afternoon, then ferry to Santorini on Tuesday morning Tuesday-Thursday. Just didn't know if that's worth it. We definitely want to do a cataraman to the volcano in Santorini but other than that we are open on what to do there.
TLDR version:

Possible new schedule:
Friday: Arrive in Athens
Saturday: Athens
Sunday: Athens/fly to Mykonos
Monday: Myknonos
Tuesday: Ferry to Santorini (morning) - stay in Fira
Wednesday: Santorini
Thursday: Santorini/fly home

Current schedule:
Saturday (2 AM): Arrive in Athens
Sunday: Athens
Monday: Fly to Santorini
Tuesday: Santorini
Wednesday: Santorini
Thursday: Santorini/fly home

Worth it/possible? Which one would be better?

Santorini was the one place on our honeymoon that my wife and I wished we had spent more time. We were there for 3 days and could have easily spent a couple more, though we didn't do any island hopping.

We stayed in Oia and I have a few good restaurant recommendations from there if you want them

Hard to answer but I'll give it a shot. If you are a bit younger and looking for the beach/party aspect, and also don't mind moving around and the logistics as much (ferries, flights, packing up etc) then I would say absolutely throw Mykonos into the mix. See as much as you can and accept that the logistics are part of the experience.

If you would rather hunker down and really get to know one place - and you enjoy exploring restaurants/towns and are content with strolling around the shops and streets then Santorini is enough. We wished we had more access to the water (even if a hotel or airbnb pool) so I was really happy to fill that bucket over in Mykonos.

The high speed ferry between Santorini and Mykonos is a fun and beautiful ride in itself.
