In Florence go to Sostanza and have bistecca alla Fiorentino. I'm not sure why the other poster said it's lunch only, it isn't. They serve lunch, then close in the early afternoon and reopen for dinner. I think they have a fixed number of seatings, so you'll need a reservation. It's not fancy, you might end up at a communal table, and it's not a Ruth's Chris' type beef experience, but it's a fantastic experience.
Also in Florence, the winery restaurants, Cantinetta Antinori and Ristorante Frescobaldi. They have relatively simple but very good food and basically pour the winery portfolio by the glass.
My wife and I always have dinner one night at Buca Mario. Again, simple non fussy food.
Finally, in Florence, go to the Mercato and have lunch at Da Nerbone. Simple well made food that locals eat, very very good.
For gelato in Florence, Gelateria dei Neri.

To expand on my post from a different thread in the recent past:
Rome - We stayed in the Trastevere area and all of the restaurants and cafe's there were great, but I can't name them.
Dino et Tony's near the Vatican.
Cafe Navona was enjoyable for dinner.
Florence - We stayed just across the river inside the wall. These places are all across the river:
La Beppa Fioraia - make a reservation. They do some serious antipasto boards and the entres were also amazing.
Enoteca Fuori Porta - We stopped here mid afternoon for a snack and glass(es) of wine. Bruschetta was amazing along with the miscellaneous other items we got.
Trattoria Napoleone - awesome Florentine T bone.
We did wine tours of Il Palagio winery, owned by Sting (the musician), and Santa Margarita. Il Palagio had amazing wine, olive oil, and vinigrette. Santa Margarita was more industrialized, as you'd imagine, but we did enjoy the tasting because we were able to taste top shelf sangioveses that you can't get in the states.
We stopped in Greve on one of the tours and that was a treat also. Whenever we go back we will be sure to spend a night or two there.

They were only open for lunch in the past. Trattoria Sostanza is famous for their butter chicken so I’m not sure why you’d recommend a florentine steak that someone can get anywhere in the city. When you walk in the place there are photos of famous people raving about the butter chicken.
