What do you guys do with regard to jackets, pants, bibs, etc? I’ve seen companies where you can rent and have stuff sent to your hotel but not sure if that’s the route to go or if we should just find something there (Taos). I’m assuming I should probably buy boots beforehand and bring them with, yes?

There are companies that will rent you everything you need to ski. Idk if that type of service is available in Taos though.
By boots, I’m assuming you mean regular shoes, not ski boots. Yes, buy shoes that can handle a little snow before you arrive.

Yes, snow boots or waterproof type shoes is what I was referring to.

Not sure if you just mean snow gear or gear for a ski trip but we rent skis, poles and ski boots...everything else we own and have bought over time.
Boots, socks, base layers, gaiters, baclavas, gloves, glove liners, helmets, goggles, ski pants, ski shells and liners.
One important thing to remember is knowing whether or not your rental has an in unit washer and dryer. If you have one you can get by with alot less than if you don't.
Take a helmet for example...they will rent for like $10/day and you can find solid helmets for under $100 especially if you shop sales, closeouts or even Facebook marketplace (Checkout the Smith Holt)

Also, rentals helmets smell like the worst swamp arse after a day of riding. First time I rented one, I said never again. That was the start of it. Now I own everything. Board, boots, bindings, helmet, goggles, base, mid layers, outer layers. Everything.

Unless you are planning to go walk around in the snow, these are unnecessary. I wear running shoes when I go up to the resorts. They clear the walkways so you aren’t post holing around the resort or going in town.
I live where it snows so I own snow boots but those are for shoveling snow and walking the dogs in the snow. They stay at the house.

I disagree. Plenty of places we’ve been have had places we had to walk through snow trying to get to cleared walkways. Walking from the car or the bus or whatever. Have always been thankful to have snow boots.

When they get 1-2 weeks a year of use, they last forever.
Also useful for when it randomly freezes in the south, so you don't just randomly bust your arse walking to the mailbox.
Things that will also pay for themselves in 1-2 trips:
Ski socks, helmet, cheap goggles, wool base layer.
You can usually rent or borrow a jacket and ski bib. If you are going to go often or annually, it makes sense to buy these as well... but you don't need fancy (ebay or cheap would work just fine).
I'd only get something nice if you are going to use it alot.
And everyone should already have a fleece that would work as a midlayer (if it'll be super cold). I only wear mine when it'll be under 5F-10F.

We ski 1-2 times a year and we always rent the clothes. We live in a very warm climate, and we have little closet/storage space. Also the kids wear a different size every year. Overall I so prefer having all that stuff waiting for us in our hotel room upon arrival. I want to say we pay between $10-22 per day depending on the person.

However, I just bought my kids a jacket/bib set new with tags off of ebay.
Plus, I got a size up (so it should last them 2 years, plus hand me down opportunities).
It'll come to around for $50/kid all-in.
There are some good deals to be had right now.
