How about not going to Europe. Lots of questions with Covid right now. We made it back safely, but as you can see in the other thread, others got the 'vid. Need to assess your risk tolerance vs. the expected enjoyment. For us, it was worth it, others maybe not so much?
A Carribbean suggestion would be Grenada. We absolutely loved our trip there. I didn't stay at Sandals (now), but did eat at the restaurant next door. Would be tops on my destination list if I wanted an island vacation. FYI, we stayed in the quaint Blue Horizons. A one block walk to Grand Anse Beach and much cheaper. Loved it. Dined once/had drinks a couple of times in the very upscale Spice Island Resort.
A "dream trip" would be to go to Petit St. Vincent in the Grenadines.
