We had a little car before without air. It was rough but I made sure to never keep him in for long periods of time. It was certainly better than waiting on the side of the road for the bus or walking. Thanks for the links, I am going to look into Craigslist posting. That car for 2k looks like a great deal. I will definitely contact them tomorrow and see if they are willing to negotiate. Thanks everyone. You guys have helped me immensely!
Thanks guys. I am a little nervous with the little lots but was hoping there would be one that wasn't as terrible. I live near LSU, so I will try scouting for students wanting to get rid of their old rusty buckets.
Jefforize, I would jump on the deal if it were real and available to me. I'm just looking at something less than 1500 to tide me over until I can save a little more to get a better vehicle. Getting to school, work, and daycare in a reasonable amount of time is a little difficult with a toddler on the city bus.
Are those users here looking to sell their cars? @jimbeam

I'm looking for a bucket with wheels. I don't care if its ugly, if it whines, or does not have air conditioning. I just want to put a car seat for my son in it and drive from school, work and home which is less than 20-30 miles a day. I know I am not going to get anything long lasting for cheap. I am just a little desperate for options. Anyone see something sitting to the side with a sign up or have a recommendation for a small dealership that they know about?
My last roux turned out a lot better! Not as dark as I wanted but definitely good! I am super excited and ready to give it a go again soon! I read through everyone's suggestions and am ready to try my hand again! I think I might use peanut oil next time I make it not he stove and I also want to try the oven method!
I'm not too sure about the hot/cold separation as everyone seems to have different methods but I did the hot roux/ cold stock and it seemed to work well!
Edit: I just want to say that I am really grateful for everyone's comments, it's awesome to get these questions that I had answered! It means the novice can progress further! I'll be practicing my roux making skills often now!

I am stirring it constantly, I am super obsessed with not burning it so I watch it like a hawk for 40-1hr 1/2 on low.
I am using vegetable oil at the moment. I was thinking of upgrading to peanut oil.

That's awesome! I will definitely try that next time! I tried searching on the board but I don't think I was looking hard enough! I would have died for that! I've been trying and failing at roux for the past four hours!
Edit: I didn't notice your username! I think your gumbo was linked in a stickied thread and after seeing it, it inspired me to make my own gumbo!

Do you have a temp you normally work at? Or do you adjust to needs more hear vs oshit it's burning?

Roux trouble

Long time lurker here. I've made a lot of your recipes and really enjoyed them! I'm not the best cook but I am some what capable in the kitchen.
However, I am having a lot of trouble with roux for gumbo. I love everyone's gumbo but mine. I just want to cook a decent batch for once. I am on my tired batch of roux at the moment. First, too smokey. I think I burned the oil. Second I waited too long. I was trying to see how dark I can take it. Came out tasting weird. The third, that I am working on right now, is a light blonde color right now. I've been here for a while watching it on low. I've looked high and low for roux instructions. But other than som,e shady sites, it's always l---> get flour and fat---> magic roux!
I'm super embarrassed and I just want to be half decent at Cajun foods!
