IMO bone-in is always better. Something about the tenderness of the meat at the bone.
Fwiw - I have never bought a bone in ribeye before.... I just know I like them much more at restaurants.

Quality meats, little expensive imo. The good thing is that you know you will be getting a quality cut of meat as opposed to having to guess at most other places.
Fwiw - I like to find a small local grocery that has a butcher, you will get the best cut at the lowest price at that kind of place

Okay so this turned out to be a huge sucess.
I marinade the quail in equal parts low sodium soy sauce, and maple syrup, then added crushed garlic and chili paste. Throw them in the oven for 10 min at 450 then reduce to 350 and baste every min or so for another 10 min. Delish!

I thought you might be someone else... IF you were, than i have eaten your pastalaya and its the best. The recipie posted in TD recipe book is very similar to what we cook on gameday.

Smoke it for 2 to 3 hours then place in pan (aluminum or glass) and cover with tin foil and cook for another 2-3 hours. Its cake.
Keep the temp above 225 but not over 300 during the smoke process. ANYTHING lower than that will make the meat greasy.

tabasco is a good all round hot sauce but in my opinion it taste much better on cold food items as opposed to hot

On the subject of Fish City Grill. I had a great time and dinner there several months ago...maybe it was a good night for the cook staff.
From what i understand about Perkins Rowe and TS, is that he threw the original contractor off the job for nonperformance, and then brought in his own contractor to finish. They signed up all the original subs to complete. then TS didnt pay them for extra work or for the work they performed under there contract. All of it sounds really fishy to me, especially since he got rid of the low bid contractor....

Everyone keeps talking about Raouls or riverside or akasha behind Freds....
1 - Raouls/riverside are the same thing. fried greasy burgers that will make you stink like grease the rest of the day
2 - Akasha is good, but still very greasy.
The place to go is Dearmans in Bocage (corporate and jefferson) This place has the best burger by far in town. and you can get a great chocolate shake!
