re: Duck Sausage Recipe

Posted by deerbutcher on 3/26/14 at 3:15 pm to
I made some sausage for someone using 1/3 duck, 1/3 pork, and 1/3 boneless chicken thighs. Seasoned it with my Cajun mix and added jalapeños and green onions. He gave me a pack to try and it was good, could still taste the duck but wasn't too strong

Was the price label a Winn Dixie label or the chicken company label? If its a Winn Dixie label, they have the opportunity to change the sell by date, it's not right but they hate to throw away products too
Not only does the credit card company charge the merchant a fee on the purchase, it also takes the fee from the total transaction, taxes which are not the merchants to keep just collect are also in the fee. Then it will take at least 3 days for the deposit to reach your checking account, so your money is tied up for a few days where cash can help buy supplies, or make payroll on time
Get a new processor if he cannot do your meat the way you like it
If you put 50% or more of pork, how can you still call it deer sausage when there is equal amounts or more pork in it?

That price is in the sausage and ground meat charge, we do not pack meat that's not processed here, and if for some reason you don't want it packed, we discount your bill by .40 per pound

I did a few years back, it's too time consuming, have my hands full deboning and making sausage, and there is too much competition in Houma

Some people will include my deboning charge into the total price per pound and that will raise the per pound price. I took offense to someone making a statement that I was twice the price

When you refer to Raceland, I guess you're referring to me, my current price for boneless meat, 50/50 and vac packed is averaging $2.33 per pound
Yes, the back leg of beef is referred to as a round, it consist of the top round(inside round), bottom round, eye of round, and sirloin tip(knuckle). It is rare to find a full cut round because the knuckle is usually removed at the packing company.
There is a primal called the gooseneck round which is the bottom and eye still intact
The rump roast is the cow's arse, now a Boston butt is a pigs shoulder, figure that one
A whole pork shoulder consists of the picnic(round bone) and Boston butt(blade bone). In stores they are sold separated, butcher shops are your best bet to get a whole shoulder

You will not see a buy one get one free for primal cuts

If you want to pay steak price for an untrimmed rib rack I'm sure they would do it

In Philadelphia they make a sandwich called a "Philly cheese steak"

They put them on bread and make a sandwich with grilled onions and peppers
And do you really believe that if their life depended on a person to prepare food or die that a person lacks the ability to do so. It doesn't need to be the 5 star restaurant quality meal, just life sustaining.
What do you think about people that don't cut their own grass? What do you think about people that don't clean their own fish? What do you think about people that can't skin their own deer?
It's what makes America great, whenever you don't want to do something, or can't, somewhere there is someone willing to do it for the almighty dollar!!

.60 per pound processing is hanging weight, which includes fat and bone they will throw away.
4 strokes are not known for torque, put equal amounts of gas in each and see which boat travels further
The chuck has 2-3 eye steaks. This is where the chuck primal and rib primal are separated which in why they look like small rib eye and taste just like one for a much cheaper price.
How many people know where a gooseneck comes from on a beef animal, or why a Boston butt is not the butt at all?
Do you realize that you paid $19.99 a pound for bacon?
