I put some minced fresh cilantro in mine sometimes. We like cilantro. And dry oregano.

Cumin, chili powder, smoked paprika Worcestershire sauce


Onion, garlic, hot peppers or my habanero pepper sauce to taste. Got to go pretty mild on the hot stuff for the wife but add more in the bowl after for my taste.

Cumin, chili powder, smoked paprika, ancho powder (or poblanos), sometimes beer, sometimes dark chocolate.

After I moved out of the parents house to go to LaTech they would call every week. After the first cold snap to hit Memphis they called and said Dad made chili but it didn’t come out right. After I stopped laughing I had to confess: ever since I was a little kid I had been sneaking into the kitchen whenever Dad left it and would liberally douse the chili with Tabasco. I had been doing it for about 10 years.

Granulated garlic
Salt
Pepper
That’s about it.
