Eggplant Parmesan

I had a can of San Marzano tomatoes in the pantry and decided to make Eggplant Parm.
I used this recipe from Once Upon a Chef:

I've made EP a few times, but this recipe adds the step of a bechamel sauce to meld with the marinara.
Picked up two eggplants from the farmers market, cut them 1/4" thick, and salted them for 90 minutes to draw out the moisture
Whole San Marzano tomatoes, crush garlic, halved onions (removed after simmering), oregano, EVOO, salt, immersion blended after the summer
Breaded up the eggplant rounds with flour, then egg, then breadcrumbs, and fried
3 layers of fried eggplant, marinara, bechamel, mozzarella, topped with freshly grated parmesan reggianno
Baked
Cooling now, I'll update with a fork view and taste test
It was a lot of work, hopefully worth it

Looks great Kosmo. But my favorite with eggplant is Moussaka

Looks delicious! Next time, put some foil under the paper towels for really easy cleanup. I usually just line a baking sheet with foil and put the grates over the foil.

I have two baking sheets but that's what the eggplant was on.
Good idea about the foil!
It was on the induction stove top so it didn't leak on to the butcher block, so clean up was a bit easier

Good Deal! I despise cleaning baking sheets, so I'm an avid user of foil on baking sheets.

This is my first time frying them, I baked them in a convection oven the other times.
It was definitely more crispy, but the whole thing is a lot of work/time consuming for one person

I’m a climate change denier, so don’t think this is coming from a hard core environmental perspective, but is it really hard to quickly wash a baking sheet? Why waste foil? Darn near as hard to fetch and place foil as it is to wash oil drips from a sheet pan.
I do line my drip pans when smoking though. That is not easy to clean.

It takes mere seconds to put a piece of foil on a baking sheet. I don't have to go "fetch" it from some far away place.It's right there. It takes longer to clean especially if there's scrubbing involved. Water seems to spray out of the sink when rinsing. Then you have to dry the sheet and wipe around the sink. Most of my baking sheets are pretty large. Foil is cheap. My time is not.

Sal and Sams in metarie had the best. And i grew up in Italian NJ. Find that recipe and you will know perfection. And easy. .

I love Egg plant. Can do so many different things. We have something similar in india. You fry the egg plant with chick pea flour and then stir fry with cashews, peanuts, onions and masala

It does grind my gears when people overly use foil, like for cooking a frozen pizza, biscuits, etc. These all require very easy clean up. I reserve foil when I know it's gonna be a mess and effort to clean if I don't.
