Truly vacuum sealed beef and pork can easily last in the fridge 3 months. Chicken I would trust more than a month even if vacuum sealed.

I don’t expect everyone to be an expert on food safety, but to have zero clue as to how long you should expect raw meat to last is unbelievable.

Expiration date will trump whether or not it’s vacuum sealed unless it’s in the freezer.

I’m am a-hole because I can’t believe someone would think raw chicken is good for 2 months despite expiration dates on packages?

I would say the delivery was off, but the message was on point

I'm pretty sure the date on the big packs of vacuumed sealed chicken I buy at Sam's is typically only a week out.

Expiration dates are estimates, so there's definitely some play there.

That being said, non-frozen raw meat is just not going to last that long.

Estimates is not a good term to use. A meat processor must use science to justify the date they pick. They cannot just guess, they must have scientific data to back up their claim.

The company can’t just say, “it should be good for 5 days”. They must say “it will be good for 5 days based on this particular data that proves the claim”.

How do you do this? You take a piece of product, send it to a lab, and run tests on it to see how long it takes for certain bacteria and certain amounts of bacteria to grow. That’s your scientific data.

So you have your data that shows the meat will be good for X days as long as the proper handling procedures (like temperature) are followed. Sometimes the meat will turn bad early and this is due to other factors that are not supposed to happen, but do.

Use by dates are how long the company can guarantee that it’s safe for (based on the data assuming all proper handling is followed).

Sell by dates are how long the grocer has to sell the product.
