Cucumber Salad

Anyone have a good recipe for a Cucumber and Tomato salad for 100-150 guest

This is a favorite of mine, but it may be a little strong tasting for some people.
I slice the cucumbers fairly thin and cut the tomatoes in bite size chunks.
Then I take garlic, peel and crush it and mix that with some salt, black pepper, olive oil, vinegar and some finely diced sweet basil and pour it over the vegetables. Place it in the fridge to get cold and to marinate a bit for a few hours and serve.
You can lighten up on the garlic or simply leave it out. My wife likes the above, minus the garlic and adds small cubes of mozzarella to make herself a refreshing salad she takes to work.

Mine is pretty simple:
Tomatoes sliced taste
Cucumbers sliced to taste
Red onions sliced to taste
Salt and pepper to taste
Mix of italian dressing, balsamic and red wine vinegar
1/2 to 1 TBS of Woster
Put it all in a bowl, add dressing and Woster mix well
Add Feta cheese to taste
Mix well
Let it sit overnight if you can.

cucumbers, grape tomatoes halved, red onion slced, packet of ranch dressing, a little greek yogurt, salt, pepper, red pepper flake, lemon juice, a tny bit of mint, the person I got the recipe from adds a bunch...but I dont lke mint at all. You can add as much of the ranch seasoning as you like or none at all if it isnt your thing. I make a pretty big bowl durng summer garden time and only use about a half of a pack.

I don't have one, but I learned that drying your cucumbers is suggested by watching America's Test Kitchen. If you place slices in a colander then top with a towel and some weight, they will lose a good bit of unwanted water.
