I find reasons to cook with it. Incredible stuff
For my mashed potatoes I simmer shallots and garlic in butter before cooking it down with cream, salt pepper and nutmeg. It’s ridiculously good

Shallots are delicious and probably underrated, mainly because some folks don't know how to use them or what they are.

If I have them, they go into anything that involves onion being cooked down by default. They're like the bridge between onions and garlic in some indescribably good way.
