The best andouille

I am always switching between types based on application, smoke content, etc... Usually like Baily's for most recipes.
Who be da best traditional style???

As my name implies, I love the stuff. When I don't have time to make my own, I make a trip to Laplace for Jacob's. Many people have said to me, "you don't have to drive all the way to Laplace, you can get great andouille at.....", and its a lie. I have stopped searching for suitable andouille in the Baton Rouge area, it isn't there except in the imaginations of those willing to settle for inferior sausage.
And I hate the use of the word "best" because once a product or place meet standards, it is a matter of taste. However in the case of Jacob's andouille, it fits.

I use Jacobs quite a bit too, but usually remove the synthetic casing as it has too much smoke for my taste. They are USDA approve to ship they have additives (only one in LaPlace, so i'm told) etc... so it does hold well. If I am cooking gumbo at my tailgate, i will use Jacobs because you really don't even need to refrigerate it if its vacuumed sealed, at least for short periods of time <10hrs. If i am using it same day I buy Bailys, but it does seem to spoil faster and gets a slimy outside; probably due to packaging is just clear plastic wrap. Baily's doesn't smoke as heavy as the others so its good for dishes that you don't want a lot of smoke, like a shrimp and andouille cream sauce.
I haven't had much experience with Cox, I heard that the Brennan's have cox produce their andouille for them. The gumbo's at mr. b's have small gauge andouille, but they don't sell it at cox. I find that they are the most inconsistent, but i still enjoy their product.
And Don's - I grew up on this. They have a really good turkey rendition.

i have been an avid supporter of Jacobs for years, but i have noticed their prices have been climbing. It's now significantly more than Baileys on the same block. I might try Baileys next time to make sure Jacobs is still worth the extra money. It's definitely a heavy smoke flavor, but i like that. I like the meat/smoke essence in the gumbo more so than having to use tons of andouille and the gumbo turning into a pork stew.

+1 Best Stop...but beware if you're using it in a recipe...it's VERY strong so you might need to add a little less than you normally would.

Best stop products are and have been long overrated. They are very inconsistent with their products and its been like that for years now. All they have now is the name. When I was still in Lafayette someone would bring it buy every morning at work and it was different every damn day. The people doing the work there are freaking teenagers they get from the surrounding area and to top it off the place is freaking filthy inside. I will get off of my box now.

I haven't noticed a hike in Jacob's prices, but I'll keep in eye out for that. I don't think I can ever use anything else though. People don't beleive me when I tell them the only thing I use to season my gumbo is a good soaking of Jacob's andouille.
And to whoever rec'd Wayne Jacob's smokehouse, don't. They're not that good.

i think i will have to try Bailey's next time. I mean jacob's cost 30% more. Need to make sure i am making the right choice using Jacobs at the higher cost.
