Get a therm for your grease. Nothing sucks worse than a beautiful golden brown skin and pink meat on the bone.

This is why I fry mine in shallow peanut oil, then finish them in the oven. Same with pork chops.

Salt, pepper, flour, peanut oil, cast iron skillet 350 degrees. That's it. Simple good fried chicken the way it ought to be fried.
