What are y'all's favorite atypical ways to prepare fish?

Just had some dips made with fish. They were redfish, mahi-mahi, and snapper. Pretty damn good.

Made some poke last week with some fresh mahi. It was outstanding. Used a little more sesame oil though because the mahi isn't as fatty as the tuna they recommend.

I have had catfish fillets baked with a big pile of parmesan and seasoned breadcrumbs at a resturant in Monroe that was damn good (called catfish DeSiard)...
also had a couple of casseroles made with breaded/panfried fillets then baked with cream of shrimp soup and some other stuff....

Cut small potatoes on a mandolin. Use these discs to create a scale looking crust. Rub it in olive oil and seasoning of choice. (I use Italian seasoning and Tony's) bake until golden.

Depends on the fish, Catfish either baked with lemon, onion, and capers or fried; redfish either blackened or grilled; snapper I like to grill. I usually make a mango or pineapple salsa to go on the fish I grill.

Wife did fish tacos today with fresh sacalait and chinquapin. They were awesome.

I cooked a couple of whole bass on the primos over oak, then made tacos and it was much better than expected.

I made redfish tacos (soft) the other day. Cooked redfish in oven with citrus and salt/pepper then made a pico/coleslaw type of topping to throw on

Grilled some whole white perch (scaled) a while back as an experiment. Wrapped in foil and cooked 45 minutes on indirect heat. Opened foil and cooked another 15. Pretty good but would've been much better with a cream sauce of some kind.
