Also, Mouton's in Carencro/Arnaudville is great. Good potatoe logs and boudin balls too.

Wow. I can't believe someone mentioned this place.

It's in Carencro, BTW.

My dad has a place to play around with his toys in the area... haven't been there in years. If I recall, they didn't change their frying oil that often, but the chicken was good. I'd take Fat Albert's, Mama's or Popeye's over it.

When you raise the little sumbitch from a hatchling, cut his head off and pluck him on Saturday, and then fry him up in a cast iron skillet on Sunday after letting him soak in saltwater overnight.

Better still if grandma or mom is doing the cookin'. Fix up some mashed potatoes, make some gravy from the chicken grease, and some corn or peas and mmmm mmm good!

That was many a weekend when I was a kid.

I do the same at home now but mom and grandma had some technique that I have failed to master thus far.

Bottom line: fresh is the best. And you know where that thing came from and what it ate so you know its good and natural. It just tastes better, all other things being equal.

Got no use for factory-farmed chemical laden frankenchickens.
