after my thesis defense i headed over to chimes and had a dozen and a beer.

That's what I'm told too. I eat them whenever I feel like it. Nothing better than a few dozen raw ones and some beer at the beach.

FWIW you can get sick from them anytime and they say you haven't been sick until you eat a bad oyster and you will NEVER eat them again. I think your brain must come out of your arse you shite so bad

Very simple reason. Water temp is cooler, so more nutrients(shite if you will) gets down to the bottom of the oyster beds in cold months, and thus they are better fed.

Dude, the refrigerator part of the equation is about what happens after they are hervested. Way back in the day, they might would have sat around in the heat for a few days and that is how bacteria would form.

They are safe all year now, just better tasting/fatter in colder months.

Go fish Lake Mechant and look at the sacks just sitting on the decks of those boats for hours. Makes me stick to cold weather months, pasteurization or not. Definitely not refrigerated.
