I've been obsessing over this dish since you started this thread. We have excellent traditional Mexican restaurants where I live but nothing I would really call Tex-Mex.

I've gone down a rabbit hole collecting recipes. I see some cheese enchilada experiments in my near future.

Enchiladas con huevos - exactly what you described + fried eggs on top - at El Rio Grande sets the standard.

Man, I was coming here to post this. I know it is sort of off-topic since the OP is looking for somewhere nearby, but the Chili Parlor does exactly what the OP is talking about. I had it a couple weeks ago and it was great, as always.

I prefer their chipotle sauce but Chili Parlor is great. It's an old austin place that has retained is character in a sea of nuevo crapola.

I've never had their enchiladas, but Chili Parlor is not far from UT at all either.

I'll second Enchiladas Y Mas. The food overall is nothing amazing, but their Enchiladas are good, as they should be. Their Margaritas are very good and strong, and their Migas (add cheese and chorizo) is awesome. If you venture outside of those food options, you may be disappointed.

If going for lunch, try to get there early. It's probably not too crowded on weekdays, but come dinner time, you will need to get there by 5:30 the latest unless you want to wait 30 min or more for a table.

I am a big Tarantino fan and went to Chili Parlor after it was featured in Death Proof. I was disappointed.
