That's good to know. I've only been there a couple of times. Is it still next to where Roma Deli used to be?

andouille, if you get to hang out in the kitchen area of local restaurants because of your work, name some places that I should be leery of?

When I was at the Melting Pot, it was extremely clean. Almost took it overboard with it.

Cleanliness is pretty important to me. I'm not impressed just because something is "authentic" and I don't brag about going to places that are lesser known hole-in-the-walls.. although I often enjoy them.

Cleanliness is why I don't go to Rama anymore. I witnessed the kitchen and it was a real eye-opener. My main pet-peeve is when the person handling the food also handles money/change without using gloves to handle the food.

I think one of the reasons I like Tokyo Cafe so much is that it gives the impression of being a clean place.

Made us waiters/busboys bust our asses cleaning the tables (they were pretty tough to clean because of all the melted cheese and chocolate that dried up into the grout and metal plates and burners), then in the kitchen, wiping down all the stations till they're spotless, same with all the metal. Then you had the kitchen guys spraying down/bleaching the floor. Also we would have to vacuum the dining area that was carpeted.

All in all, it's really a nice thing to have because it was a very nice environment, it just sucked for us.

This is how it is at Cane's. If we are not helping a customer or re-stocking things, you are cleaning, sanitizing, etc.

I've likely been in the kitchens of a couple of dozen, some were cluttered, none were what I'd call filthy. The worst one closed a few months ago. Besides, I wouldn't rat out (bad choice of words) a customer, not good for business.
