I've really liked everything I've had from there. And I think, to the extent this means anything, it's pretty authentic. BTW, I've bought their bacon (drawing a complete blank on it a the moment) and it's really worth bringing home.

Benton's bacon from Tennessee. I get it directly from the source every summer (it's a little smokehouse on an old highway between Chattanooga and Knoxville).
It's fantastic stuff indeed.

I've never had bad food from there, in fact everything has been above average. It truly is a gem.

It brings in money, yes. That does not mean New Orleans is a wealthy town in the least. Unless I'm imagining a budget deficit. This is a poor city.
His inane point was that New Orleans dining is good solely because of tourism $$, while scoffing at the (accurate) notion that our cultural history and the amalgam of immigrants in years past contributed to the diversity and caliber of our dining. Yes, because tourist dollars have propped up Mandina's and Dooky Chase and the innumerable restaurants which have been staples since the early 20th Century..well before Mardi Gras was a destination for college kids from Michigan
For every R'evolution or Brennan's there are a dozen restaurants which were founded a hundred years ago by poor immigrants and have been rooted in the New Orleans community ever since.
ETA: He's basically maintaining that the quality of NOLA dining is a symptom of the city's tourism and supposed massive wealth. The opposite is the truth..the city's dining culture enabled the tourism
