Same here regarding the corn......Sux that corn isn't friendly for a Type 2 diabetic.....I love it though

Butter it and sprinkle on salt, pepper and curry powder. Wrap in foil, on the grill 20 minutes turning once.

Last summer, I learned the best corn trick (hell, maybe it was from this board). Take an ear of corn, cut the stem end off just before it starts to taper. Microwave for 3 minutes, then use a pot holder to squeeze the pointy end of the corn--the de-silked ear will slide right out. Amazing to know I'll never have to shuck another ear and pick off the silk. Prepped/cooked this way, the ear is completely free of silk.

That's how I've been doing it for years. I haven't boiled corn in so long that I can't even remember. If the corn is fresh picked that day, though, I only microwave for no more than 2:30. Fresh doesn't need much cooking.

I have a ton of ceramic corn dishes that are oblong like the corn. I put a slice of butter in the bottom and roll the corn until it's coated and then, I eat it.
