Mate you need a good fatty, greasy sausage so all that flavour works it’s way into the gumbo. Some of that stuff posted looks so dried out how you even gonna brown it?

Head to Brusly, and let Mr John Benoit fix you up with some Garlic and Green Onion smoked sausage from Benoit's. The initial reaction when folks taste my wife's gumbo is absolutely priceless.

My suggestion , make your roux dark and thick. This is smoked duck and andouille gumbo from Charlie G’s

Wayne Jacob's andouille is the gold standard for us. La Place. Also their smoked chickens are the best.

Unless you're getting some La Place andouille, Rabideauxs is the best, smokiest, smoked sausage for gumbo.
