Here's where they are this morning. I actually think I could fit 5 briskets on the smoker. So far no issues. It's run through roughly the same amount of pellets and everything looks good. Internal temp is up to 184 at the moment. If it doesn't start moving up after about 1030, I'll be wrapping them.

And sorry, I would have taken better pics before I threw them on. I know you can get pretty aggressive with trimming and still be alright. I did trim the fat on the bottom side down quite a bit.

Save and freeze that fat from the trimming. Then you can melt that down to turn the fat into tallow which you can inject into your future briskets.
