I don't really care for black-eye peas, but I made this recipe, and it's a keeper. Good stuff.

Thanks Treedawg.

Thank you bruh, got my stuff on the counter to make this in the morning with a Rib Roast. Happy New Year y'all, came here just now to share again. My Mom made this every year and it's one of my tribute dishes.

quote:

Brown Sausage.
Add Green Onion, Bell Pepper, Ham, Garlic Powder.
Cook 10 minutes.
Add Peas and season to taste
All of this is in the same pan? Once you put the peas in, is the heat cut off or do you heat them too?

Fantastic. The jalapenos really shine through on the peas and it wasn't too salty. I will admit I only used five tablespoons of butter instead of the whole stick.

Thanks. Here are a couple of other pics of the casserole after baking and then plated up with some cabbage and ham.

Felt this thread was worth the annual bump again. Can't recommend this recipe enough for your New Years Day meal.

Add chopped cabbage in the browning portion and you nail all three of the needs for New Year’s Day in one casserole.
