I saw some turkey flats at the grocery store, which interested me. How should I cook them? I was thinking of either air frying them or smoking them. Any thoughts?

Dry Brine with salt or preferred BBQ Rub overnight, and smoke them. Once the rub is set baste them with butter as they cook.

I would stuff them like Glenda’s Creole Lunch House (or stuff with boudin) , brown wings to make a gravy and smother in onions. Cook slow and low covered in the oven.

Smothered. Cut slit on one side of the meat, stuff with garlic, dust with flour and brown, then cook until tender in gravy/roux until falling apart. Serve over rice.

I like to make sticky turkey wings. They make a hell of a gravy.

I learned about stuffed wings in a thread on this site a couple of years ago. Delicious dish. It's a great thread but I couldn't find it to link.

They make a heck of a good sticky gravy. I cook them just as I would a typical gravy.
