Tried something totally new today and it worked. Lucy loved it, too. Shrimp Scampi. I found a recipe and altered it:
2 pats of butter in wok
Stir fry 1/2 cup panko japanese bread crumbs
For 2 minutes.. set aside
2 more pats butter in wok + drizzle of olive oil (about 1/5 of a cup).
Sauté red pepper flakes and garlic 1 minute.
Add 2 lbs. of peeled raw shrimp and a dash of onion powder.
Add ½ cup wine ... stir for 2 minutes.
Add panko mix back in and stir.
Cover with lid and let simmer for 2 minutes.
Serve over angel hair spaghetti.
I'm usually a red sauce guy when it comes to pasta but this came out great. The red pepper flakes really give it a kick. If you don't have a wok you can use any big pot. If you don't have panko you can use regular bread crumbs.
