Can we be e-best friends? I'm the same way. Everyone else says I'm crazy.

And while I'll eat the heck out of'em like an apple, onions truly are the best thing to add to any meal for flavor. And lest we forget, the sheer beauty and flavor of a mess of onion rings is absolutely unmatched

Just did turnip greens for the first time. Really love the flavor.... Started with dicing up some tasso and saute with onion in a little fat. Deglaze with a little white wine. Dice a couple of the turnips and throw them in for a few minutes, let it cook down. Then chop up a few bundles of the greens and throw them in until they're the texture you want. I did them just long enough to reduce a good bit, but remain leafy.

I go through phases but I really can enjoy any vegetable as long as it is fresh.

I roasted broccoli at 375 for 35 tonight, added eggplant about 15 minutes in. It was awesome. Served with perfectly medium rare filet

That's the best part of the way I described, there's no spongy texture.

Chard, I try to mix it into as many salads as possible.

I also really like kale, broccoli & brussels sprouts.

You are very astute. I paid Tribute to the Potato, in another thread. It's the "Old Standby".
