I do a beer brine then cook them in a rotisserie wing basket on my joe.

Rub of your choice, I either do a standard BBQ rub or something like lemon pepper wings
Smoker at 225 for 2 hours
Drop them in the fryer
Out the fryer into wing sauce

Dry salt brine for at least 24 hours
Wash off salt and coat liberally with homemade rub

Finish on grill to ensure crispy skin
