It's best to fill up on food and water early and just eat/drink every now and again to maintain it. You'll rarely see thirst or hunger messages. This also keeps your character's energy up which in turn allows you to regen health.

Here's a link to health/food in DayZ. Apparently there is a Brain Flu that zombies have a 1% chance of giving you and once you have it, there is no cure.
