Missing so many greens the last couple of months!!

Last couple of months I have zero confidence in my iron game. It’s a draw, then fade, then straight….just so inconsistent. So then I step over the ball and swing thoughts are all over the place

Check your alignment.
Go to the range, set up to an intermediate target on same line as your actual target, then drop an alignment stick on your hells and see where your body lines are pointed.

Pick a shape and stick with it. If it's a fade, make sure the ball fades and worst case it should go straight.

It’s probably against all conventional wisdom, but when I get like that I have the best results just accepting the straight shot and stomping on it. Swing hard and aim straight at the flag. I don’t know why it works for me, but when all else is failing me that as gotten me through some pretty dark rounds with approach shots.
Sounds like you know how to work it/ sometimes I just get a little out of whack with tempo and this helps me get right.

I dealt with something similar. Here’s how I approached it. Hopefully it helps.
Grab a wedge, short iron and long iron. Go to the range and hit 10-15 balls with each. Prior to hitting, know your approx distances with each club. Pick points on the range to aim directly at. Basically, think “Aim small. Miss small.” Take note of where your shots are ending up. KEY: Set alignment sticks to make sure ball placement in your stance and aim is consistent for each.
You should also be aware of:
Grip - strong vs weak
Alignment - start STRAIGHT. For the time being, I’d focus only on straight alignment.
Equipment setup - regular flex vs stiff shaft, is it draw or fade biased?
Based on your initial results of what you saw on your range day, research what may be causing you to fade or draw the ball. Basically, cross-reference the research to gauge what may be the root cause. If you feel you’re doing multiple things wrong from research, FOCUS ON ONE. For me, it was an alignment issue. I started there and made big strides.
Lastly, video your swing. I know it’s dorky and prob frowned upon but I’ll set my phone up to record a slo-mo video while I work on things. Often times what I FELT I was doing vs what the videos showed is different. Research again and apply minor adjustments until you’re happy with the results.
Once you get to a comfort zone, develop your pre-shot and post-shot routines to build permanent consistency.
Good luck and keep swinging. Don’t overthink things. Just enjoy the game.

Biggest thing that’s helped me hit more greens / not miss them way left or right is hitting a lot more shots at 85% rather than trying to hit every shot at 100%. Just because you can hit your wedge 150 yards doesn’t mean you should try and do it every time. Club up and swing easier

Learning to hit shots 85% without hitting deadpulls has made my whole game more consistent. Good hand eye coordination is a must.
I can still hit a PW 150 but I am much better off when I'm playing it 135-140

I use GHIN app.
Last 10 rounds I’m 62% GIR. 14% of my misses are left, 13% short.
I know where my misses are, so it’s a little easier to know what to do in the fairway. Only 4% are long, so in doubt, club up. Easier said than done I know, but most of my shorts are when I catch it a little fat.
I’d bet a significant part of your problem in shot shape will clear up when you know more about your results.

Learn to hit a knockdown shot and it will save you a lot of strokes on days where you can't seem to control a full shot. If you're not sure what a knockdown shot is, it's like a mix between a punch shot and a full swing with an abbreviated finish. Club up, choke up and knock it down
