Boondock Saints
The Departed
Saving Private Ryan (Attack at Normandy is worth buying the movie)
Lord of the Rings (Extended version of course)
Jaws
Apocalypse Now (I've rattled the windows numerous times with the beach attack)
2001 is fricking amazing
The Dark Knight Trilogy
There are others but this is a good start

3d= Grand Canyon with DMB music (IMAX)
Non-3d= I actually like Sweeney Todd; but for effects, definition, and sound...Prometheus ( or the new Star Trek) wins. Not my favorite movies, but incredible when jacked up in a home theatre.

Kind of shocked no one has mentioned the Pacific Rim/Band of Brothers set. Band of Brothers was the best DVD set I owned or even saw and the bluray is better.
my other favorite for sound is Chris Botti live. Jazz trumpet but he brings in a lot of guests to sing and perform with him.
