Because the whole point was they wanted to get to the Lonely Mountain in secret. All of Middle Earth wanted the Lonely Mountain and was waiting for Smaug to die. A flock of giant Eagles flying straight towards a place that everybody is supposed to be scared to go to might tip some people off.
Same in LOTR. Stealth is the key. Sauron is constantly on the lookout for the One Ring and he has spies all over Middle Earth. Eagles anywhere near Mordor before Frodo is already snuck in probably seems suspicious.

I always thought it was because the Eagles wanted the fellowship and Dwarf parties to overcome the trials of the journey for themselves... and anytime there was absolutely no hope they came in to save them.

The 1970s were a great era for movies -- The Godfather and The Godfather II, Jaws, A Clockwork Orange, One Flew Over the Cuckoo's Nest, Close Encounters of the Third Kind, The Exorcist, Grease, Taxi Driver, Willy Wonka & the Chocolate Factory, Rocky, Chinatown, Saturday Night Fever, Smokey and the Bandit, The French Connection, etc.

I liked the Lord of the Rings a lot, but the Hobbit trilogy is worse than the Star Wars prequels. Put it this way, even after The Phantom Menace, I paid money to see the other two movies. I saw the first Hobbit movie in the theater, damn near fell asleep and had no desire to see the other two. shite, I haven't even bothered to watch them on HBO OnDemand.

Agreed, and it's not really close for me.
And I say that as someone who loves Star Wars. But LotR is my #1 trilogy of all time.
ETA: Empire may be the best movie in the contest, but LotR as a trilogy is a lot stronger IMO.
