Really it's all subjective. Some people like more rice in their boudin, some people like more liver, some people like cauliflower (god help them).
Soft rice, hard rice, rice to meat ratios. It's all subjective.
I've had a lot of boudin in my life, and I find the more traditionally/local ones to be better. Don't frick up a good thing. I also find that the bigger places don't stack up.
Without a doubt though, you go anywhere outside of a 100 mile radius of lafayette and you aren't getting good boudin. And don't try and convince me that tony's in BR is good. It's awful.

FWIW, I am not arguing for New Orleans, just that you don't have to go to Lafayette to get "cajun food." There are tons of other places with fantastic food between Lafayette and NOLA.

Can't disagree with you there. T-Boy's is probably the best boudin I've ever had, I've just gotten too many tickets from Evangeline Sheriff deputies and Troopers to make me drive up there. I'm also related to the family that owns Best Stop haha.

Best stop is the best outta the big boys. Billys and dons just don't do it for me.

Hard to say what I'd do that is tourist-related since I've lived in Louisiana for so long. But I'd probably cut my days in New Orleans and add one for other parts of the state. But that's just me.

It's not really a big New Orleans thing as an Acadiana thing (Lafayette, Opelousas, Grand Coteau, etc.). But if everyone likes this guy, I might have to try it out.
I know of good places to get them in West Baton Rouge, Pointe Coupee, and definitely St, Landry. But that's about as far from Lafayette as I've found great Boudin.

I can’t speak for the quarter but very few restrictions at breweries and neighborhood bars for a few months now.

It’s such a shame that New Orleans sucks so bad these days... I remember the early 80’s going to the French Quarter all the time, and going to Saints games and just having a great time.... I have zero desire to go there now. Esp since Katrina. The turf war had begun and its went downhill ever since.

So a talented cook can't make a great boudin? That's some ridiculous shite. Piece of Meat here is as good as any I have tried. And yes, I have been to many of the places you listed.

I'm in the same boat. Part of me thinks the novelty has worn off as I've gotten older, but it's hard to keep playing that when I know what the city used to be and what it is now. It disappoints me and frustrates me to see it now, knowing its worse days may very well be ahead of it.
1-2 days in New Orleans and I'm tired of it and won't get the urge to return for another year or so. I find myself avoiding it now when I didn't used to do that.
I guess that makes me a bad Louisiana citizen.
