Replace walk ons with Roberto’s, Louisiana Lagniappe, or Ruffino’s.

Well it would be cheaper to just order a bucket of chicken and some large sides than the drive to Lafayette buffet, but not necessarily faster.
Also, that's not really much of a buffet if you've ever been. From a service stand point, and even quality of food at that location, it makes golden corral look like a top tier restaurant.

You ruled out the only redeeming quality of Baton Rouge. After LSU there is nothing of any significance.

First of all, BR is a small to mid sized city, and it’s not made for tourism. It’s a fine city to raise a family but other than LSU football and certain foods that are available I’m not sure there’s anything really ‘impressive’ about it. That doesn’t mean you can’t have a good time. Here’s my suggestions for entertaining someone:
LSU
Chimes for some LA themed greasy bar food
Top of State Capitol
Downtown by the MS river
Pick a good restaurant for dinner: City Pork, Pinettas, Maison Lacour
OR if you really want to impress them, have someone competent make some homemade food like a jambalaya or gumbo or boiled crawfish. I guess the restaurants and this are not mutually exclusive though.
If you have time, I’d take a drive across rural LA and find a good Cajun butcher like Kartchners in Krotz Springs or something similar for some smoked boudin, and maybe do a swamp tour or something. LA’s real beauty is outdoors in the swamps and marshes. Too bad it’s hard to access; a lot of people live their whole lives here and never make the effort to experience it.

I'd take them eat at Ruffino's, Louisiana Lagniappe and one evening take them to Tsunami. While it might not be the best sushi in Baton Rouge, it has a nice atmosphere and it overlooks the Mississippi River. Then yall can go walk around down town, go visit the old state capital, etc.
There is the USS Kidd.
You can take them to the Bluebonnet Swamp Center.
Take them to L'Auberge if going to a casino is an option.
The LSU lakes. Yall can go Kayaking.
Take them to places outside of Baton Rouge. Go visit some plantations.

The last time I went, they had cut it down to only students with a current ID, no guys under 20, and you couldn’t get anything top shelf or even mid-shelf. Also, they gave you one of those tiny plastic cups...Not sure if that’s changed, but I doubt it.
I always wondered how they made money serving top shelf stuff. We used to go slam down 5-6 mixed drinks between 8-10 and be good for the whole night

The only folks that believe swamps and marshes are beautiful are the fishermen and hunters. That’s it. If somebody took me to look at a swamp I’d be pissed.

I would swap those two. Out of towners always love to visit the drive through daquiri shops. They also usually want a decent seafood meal.
You can get good seafood in other places, it just costs more. However, in most other places you can't get a daquiri at a drive through.

Seriously, I would take them inside the Capitol Building, then to the LSU campus for a couple of things "before" driving east on Highland Road (which is a nice drive) all the way to I-10 then on to New Orleans.
