I agree with this completely….if they prepared the food to their normal standard, then they should charge for it. There is no guarantee that you like the food…only that they didn’t misrepresent it.
For example, if you ordered a steak in an upscale steak place and it turned out to be full of gristle, that calls for them to provide another steak (they should have noticed and not served it in the first place).
Some people are perpetually dissatisfied with restaurant food.

Just yesterday I went to Desi Vegas prime burgers. Ordered mine cooked medium. It came out and the bottom bun was soaked in blood. Broke it apart and it was raw with blood dripping out. Returned it all and told them nevermind. They offered other things but I was done. The rest of the family ate buy i just sat there sipping my ice tea.

In most cases I agree with you.
One exception to consider. I have a toddler...not often but once or twice my food has come out so wrong that it's not edible... I do not eat it..but sending it back and having them fire another one isnt an option because my kid does not have the patience to sit there through his meal THEN mine. In those cases I say please just take this off my bill and I pay for everything that actually was eaten

20% tip is too much. How about the old lady who orders 2 meatballs at Olive Garden and then wants a refund on 1 because she can’t eat both? True story. And she got the refund.

Happened to me the other day. Good thing all the bartenders know me. The fresh by date was also expired.
The bottle had a strong rusty flavor.
