You're right about the type of sauce (it needs mustard too), but wrong about the crawfish.

Out here on the Cajun Prairie, a sauce made with vinegar, salt and black pepper was common as a kid. Everyone dipped in it.

I prefer the ketchup sauce, especially if it has lots of seasoning in it.

My wife makes a garlic/butter sauce for my girls....I'll usually dip my potatoes and corn in it...not my crawfish.

Might as well boil in in pure water if you're going to dip it. Same theory as putting ketchup on a steak...

Normally nothing, but sometimes I'll dip them in the lemons that were boiled with them.
