What's the best bait for this? I fish a somewhat small lake. When I use cut bluegill, I get pretty much all blues and they're typically pretty big.
Nightcrawlers, chicken livers? What's a good jug bait for channels?

You'll still catch blues. I do not think there's a way to just target channels if there are blues around.

Zote mexican laundry soap, I used to order it from wal mart. Works best if there is a current but I've done well with it in lakes before. It needs a long soak.

Anything on a jug will catch either blues or channels. The only thing you could maybe do is down size bait and hook size.
But if you want channels only, then fish with a medium spinning rod and reel with 20 lb test braid tied directly to a treble. No weight or leader. Then use good dough bait after baiting the holes with soured milo or range cubes and you will catch more channels than you could care to clean.
Stubby's cheese bait is really good and made by a good dude around Lake Fork.

Yes. We had a farm pond growing up and would bait our trotline with chunks of soap. We only had channel cats, but I would imagine blue cats would eat it too.
